Hailing from Southern England and having fallen in love with Australia, when Steve Drissell migrated to Australia he really missed the mix of locally brewed ale and local pub spirit his homeland is famed for.

Also a keen homebrewer from a young age, Steve eventually decided to give up the security of corporate life and the kicks from playing drums in a band, to “have a crack” at opening his own city brewery, beer garden and band room.

“It’s not for the faint hearted!”

Under-resourced, inexperienced and flying solo, in 2012 Steve took a giant leap of faith and signed the lease on a derelict Glebe warehouse located down a grimy city back alley next to Broadway, and got stuck into the red tape that would need to be unravelled.

“I didn’t know how I was going to fund building works, buy brewery equipment or much else at that stage.”

Undeterred, through sheer bloodymindedness and unwavering optimism, Staves Brewery opened it’s doors some two and a half years later in October 2015 where a revolving list of award winning beers passionately brewed directly behind the bar are served and enjoyed in the beer garden and upstairs Malt Room.

“Staves is one of the smallest and hands on breweries in Sydney. I can lean against a fermentation tanks and touch tap handles at the same time!”

Fostering a community of “proper beer” lovers, banter, education and live music, Staves supports other creative people chasing their dream and having a go whilst not taking themselves too seriously.

“Proper beer is an affordable little reward to ourself that must be protected from public corporations and policymakers.”

Staves is proud to be Sydney’s only independent family brewery and band venue under one roof, respectfully serving great beer and loud music, late.

“Staves are the wooden barrel pieces that magically fit together to contain and protect our beer. The five horizontal lines on sheet music that help us learn and pass music on. And how many an Aussie pronounces ‘Steve’!”
